Non-Alcoholic Clover Club, simple with only 4 ingredients

If you are looking for an Easter cocktail – this is one of my favourites. Clover Club is great for both Spring and Autumn (for us here in Australia) when we have an abundance of raspberries. And the colour is just gorgeous.

It is perfect for a weekend brunch, use Ovant Grace or Lyre’s Dry London Spirit for your Gin component. A gorgeous, refreshing drink without any of the fuzzies.

And when you have kiddies running around (probably high on the sugar from the choc Easter eggs) you don’t need complicated recipes for Non-Alcoholic cocktails.

This one only needs 4 ingredients the hardest being the homemade Raspberry syrup (which by the way is so easy to make and so luscious and can be made before hand).

Why the egg white? Well the egg white helps to give it that frothy texture and dimension to the cocktail without changing the flavour. When you dry shake the ingredients without ice first, the protein from the egg white begins to form foam without being diluted by the ice. Then add ice and shake again. This cools the drink and strengthens the foam. Strain it into the glass and you’ll get a thick, white frothy layer. Trust me, you need to try it with an egg white or you can sub for aquafaba!

Ingredients:
60ml Ovant Grace or Lyre’s Dry London Spirit
15ml Lemon juice (use fresh always!)
15ml raspberry syrup
1 egg white
Ice
Garnish: either with fresh raspberries or a sprig of mint

How to:
In a cocktail shaker add Non Alcoholic gin, lemon juice, raspberry syrup, and egg white.
Dry shake.
Add ice and shake again.
Strain into coupe glass.
Garnish & enjoy!

Raspberry syrup:
1 Cup Water
1 Cup Sugar
1/2 Cup fresh raspberries
In a medium saucepan over medium heat add all ingredients and bring to a soft boil. Once the sugar has fully dissolved, let simmer for 10 minutes. Let cool completely & strain.
