The Classic Margarita

The days of overly sweet "virgin margaritas" from chain Mexican restaurants are over. Let the kids have those! Thanks to the remarkable array of non-alcoholic tequila options like the astonishingly authentic version from Lyres, non-drinkers can now relish a truly gratifying, grown-up non-alcoholic margarita with all the zest of the original.

Our favoured margarita recipe is a delightful twist on Tommy’s Margarita, which originated in the early 90s at Tommy's Mexican Restaurant in San Francisco. Bartender Julio Bermejo decided to swap the traditional triple sec for agave nectar, extracted from the same plant as tequila, in lieu of simple syrup. And, of utmost importance, only fresh lime juice is used … no pre-made sour mix here.

Now, Tommy’s Margarita has its detractors who insist a margarita must include triple sec. But why not have the best of both worlds? All the Bitter Orange bitters impart the same orange flavour – sans dilution or added sugar – along with a botanical richness from coriander that perfectly complements tequila and lime.
Next time you crave a margarita mocktail, we're confident you'll find this recipe truly exceptional.

INGREDIENTS
60 ml non-alcoholic tequila
25 ml lime juice, fresh
15 ml agave nectar
5 dashes All The Bitter Orange bitters
5 drops saline or a small pinch of salt (optional - but exceptional)

DIRECTIONS
1. Add all ingredients, including a small pinch of salt, to a shaker with ice and shake until chilled.

2. Strain into a rocks glass over fresh ice.

3. Garnish with a lime wedge, and optionally a salt rim.
