Davidson Plum and Blood Plum are stewed in their own juices to concentrate the sweetness for optimal flavor extraction. The heavy tannin from Davidson Plum, along with cooling notes of Cinnamon Myrtle, adds depth, while Murray River salt introduces a savory salinity. Verjus from Semillon grapes provides a tart balance, and Finger Lime Oleo Saccharum, smoked with paperbark, gives a deep, lingering finish.
